Why "for two" is the normal case
Our source's most useful finding for small households is that most air fryers only fit two chicken cutlets in one layer, whatever the quart figure on the box says. Air-fried food needs to sit in a single layer to crisp, so the width of the basket decides how much you can cook, not its depth or its capacity in quarts.
What actually matters
A drawer-style basket. Every good result in testing came from models with a basket that slides out like a drawer, with one big handle for shaking the food. Your hands stay away from the heating element.
Controls that pause when you open it. You shake or flip food halfway through. The best models pause when the drawer comes out and carry on when it goes back in.
A nonstick basket. Cooked-on cheese and sauce come off easily. Air fryers top out around 400 to 450F, below the temperature at which nonstick coatings release fumes.
What to avoid
Oven-style air fryers with racks and doors. In testing, they took up more counter space without fitting more food, and the upper rack blocked heat from the lower one, so food cooked unevenly.
Flip-top models, whose heavy lids carry an exposed heating element that can come down on your hand.
